Season beef tips
Pat steak tips with a paper towel to dry. Then season all sides with salt and pepper.

Sear beef tips
Add avocado oil to a skillet and heat over medium-high heat. Working in batches to not over crowd the pan, add beef tips and sear for a few minutes on all sides until browned (6-8 minutes). Remove from the skillet when all have been cooked.

Sauté mushrooms and onion
To the same skillet, add mushrooms, onion and 1/4 teaspoon salt. Sauté mushrooms and onions until softened.

Braise the beef tips
Stir in broth, wine and thyme. Scrap the skillet as the liquid comes to a boil to get the brown bits of flavor off the bottom of the skillet. Add back in the steak tips and simmer until broth has reduced by half.

Make it creamy
Remove skillet from the heat and stir in sour cream, Dijon mustard and noodles.

This is such an easy dinner to make and it takes less than 30 minutes! Sirloin beef tips can be cooked very quickly in a skillet. The beef is first pan seared to lock the flavors in and for all the juices to be absorbed. The steak is then braised in a homemade mushroom gravy which is made creamy by adding in sour cream at the end. It also has a hint of Dijon mustard which makes the dish taste even more mouthwatering! The steak becomes nice and tender due to the sauce which incorporates a lot of flavors into the dish, while still keeping that incredible flavor of the beef. The beef tips, mixed in with the mushrooms and all the other flavors makes for a great comfort meal, while also being low in carbs! It tastes so good you will be going back to the kitchen for seconds and thirds!

Beef tips are just smaller cuts of meat leftover from cutting larger cuts of meat. It can be sirloin, chuck steak or even stew meat. If there aren't precut beef tips at the butcher shop, I will just get sirloin steaks and cut them into bite sized chunks.
Keto Noodles
In order to make it a filling and hearty keto friendly meal, we recommend serving keto steak tips with low carb noodles such as hearts of palm noodles or zucchini noodles. These beef tips and gravy also taste great when served over mashed cauliflower or on cauliflower rice. For a lighter meal, they can also be served with a side of low carb salad.
Storage
Beef tips and noodles can be stored in the refrigerator. Make sure not to leave the dish at room temperature for more than two hours. If the steak tips are properly stored, they should stay good to eat for around two or three days. You can also freeze them in airtight containers or heavy-duty freezer bags to enjoy any other time! These steak tips will remain good for around two to three months.
